The vineyards in this region were planted before World War II and are farmed organically by hand, with very strict grape selection in the winery. Then they are aged for 6 months with some of the lees (dead yeast cells), which give a spicy depth. The result is a fresh, bright wine, full of passion fruit, papaya and green seaweed (saltiness), which is just beautiful. It’s a prefect compliment with artichokes, as well as asparagus, grilled fish with pesto, and salty speck ham.
